Making the Mayonnaise Place the garlic clove in the Thermomix bowl. Pulse a few times to mince the garlic finely. Add the egg , salt , black pepper, Dijon mustard , and lemon juice to the bowl with the minced garlic. Secure the lid of the Thermomix and start blending at low speed (around speed 4). While the machine is running, slowly drizzle the grapeseed oil through the opening in the lid. Be patient and pour the oil in a very thin, steady stream. This process should take about 2-3 minutes. Continue blending until the mixture thickens to your desired consistency. If it's too thick, you can add a little more lemon juice or water to thin it out. Taste the mayonnaise and adjust the seasoning if needed. You can add more salt , pepper, or lemon juice according to your preference. Once you're satisfied with the taste and texture, stop the Thermomix. Transfer the homemade garlic mayonnaise to a container. Notes & Tips General Tips: – All ingredients must be at room temperature including the TM bowl. – Variations in temperature amongst the ingredients can lead to poor results. – If you prefer to use olive oil, the mayonnaise will have quite a different taste. – Choose a light cold pressed oil which will be more mellow in flavour.
