Sticky Date Pudding Recipe

Making the Sticky Date Pudding

1. Preheat oven to 180°C.
2. Lightly grease a 20cm round cake tin and line the base with baking paper.
3. In the Thermomix bowl, chop the dates for 8 seconds on speed 7.
4. Add water to the Thermomix bowl and cook for 5 minutes at 100°C on speed 1.
5. Mix for 10 seconds on speed 4.
6. Incorporate the baking soda into the mixture and stir for 3 seconds on speed 2.
7. Transfer the mixture into a separate bowl and set it aside.
8. Clean and dry the Thermomix bowl.
9. Pulverize the sugar in the Thermomix bowl for 20 seconds on speed 9.
10. Insert the Butterfly attachment.
11. Add softened butter and mix for 10 seconds on speed 4.
12. Continue mixing until light and creamy for 1 minute on speed 4.
13. Gradually add one egg at a time along with the vanilla essence while continuing to mix.
14. Remove the Butterfly attachment.
15. Add the self raising flour and the date mixture to the Thermomix bowl and mix for 5 seconds on speed 4.
16. Pour the cake mixture into the prepared tin and place it in the preheated oven.
17. Bake for 50 minutes or until golden brown.
18. Allow the cake to cool in the tin for 10 minutes before transferring it to a cake plate.
19. Serve with caramel sauce and fresh fruit if desired.

1. Put cream, brown sugar, and butter into the Thermomix bowl.
2. Cook for 5 minutes at 80°C on speed 4 or until it reaches your preferred thickness.
3. Drizzle the hot mixture over the pudding.
