Preheat oven to 180°C (160°C fan-forced).

Grease your cake tin with butter and line with grease baking paper

Making the cake

Add the butter, coconut essence and caster sugar in the bowl and beat with an electric mixer until light and fluffy

Once at a time, add 2 egg into the bowl and continue beating until combined

Add the sifted self raising flour, half a cup of desiccated coconut, sour cream and milk stirring ingredients in bowl until smooth

Pour ingredients into the cake tin and bake for about 1 hour

Once cooked, remove from oven and let it stand for 5 minutes before transferring to wire rack to cool

Coconut Ice Frosting

Mix together in a bowl the sifted icing sugar with the rest of the desiccated coconut and 2 egg whites

Add 2 drops of pink food coloring if desired

Frost the cake when it has cooled down
