Making the Sweet Chilli Dipping Sauce

1. Start by wearing gloves when handling chili peppers, especially if you're sensitive to spice.
2. Begin by removing the stems from the chili peppers.
3. If you want a milder sauce, you can also remove the seeds.
4. Roughly chop the chili peppers and set them aside.
5. Place the garlic clove into the Thermomix bowl and chop it at a high speed for a few seconds until it's finely minced.
6. Add the chopped chili peppers, water, white vinegar, sugar, and sea salt to the Thermomix bowl with the minced garlic.
7. Cook the mixture in the Thermomix for 20-30 minutes at 100°C (212°F) on Speed 2.
8. Continue cooking until the chili peppers become soft and the mixture thickens.
9. After cooking, allow the mixture to cool for a bit.
10. Once the mixture is cool enough, add the fish sauce to the TM bowl.
11. Blend the mixture on high speed for about 20-30 seconds, or until it reaches your desired consistency.
12. If you want a smoother sauce, blend it for a longer time.
13. Taste the sauce and adjust the sweetness or spiciness by adding more sugar or chili peppers if needed.
14. Pour the sweet chili dipping sauce into a sterilized jar or bottle and store it in the refrigerator. It will keep for several weeks.
