Basil & Spinach Pesto Ingredients

½ Cup Parmesan Cheese
grated
3 Garlic Clove
¼ Cup Pine Nuts
2 Cups Basil
fresh leaves
1 Cup Spinach
fresh leaves
½ Cup Olive Oil
extra virgin
Salt

Making the Basil & Spinach Pesto

Place the basil, spinach, Parmesan cheese, garlic, and pine nuts to the Thermomix bowl.
Pulse or blend the ingredients in the Thermomix until they are finely chopped.
With the Thermomix running, slowly drizzle in the olive oil through the top opening.
Continue blending until the mixture is smooth and well combined.
Taste the pesto and add salt and pepper to your liking. Blend again to incorporate the seasoning.
Stop the Thermomix and scrape down the sides of the bowl to ensure all ingredients are well mixed.
Transfer the pesto dip to a serving bowl and use it as a sauce for pasta, a dip for bread, or a topping for various dishes.
